Sunday chicken, roasted in salt dough with wine

Sunday roasted chicken and gravy. Sweet baked potatoes on the side. Your kitchen will smell like heaven.

That’s what was going through my mind while reading about Mazi’s roasted chicken. I was a bit afraid, the recipe sounded a bit too simple, will the meat be flavory enough? Nonsense – it was spectacular.

And it’s so easy to make you won’t believe me when I’ll tell you how I did it. (This is my version, based on Mazilique’s recipe).

You’ll need:

  • 1 chicken
  • 3 and a half cups flour (Mazi says use 2,5 cups, I think it’s better to have more dough.)
  • 3 cups and a half salt
  • 2 cups white wine.
  • 1 lemon, 1 lime
  • garlic, lots
  • spices and herbs, lots
  • salt, pepper

Mix the salt and flour in a big bowl. Add the white wine and mix well.
Take the dough, knead it and then roll it into a sheet. The dough will not be elastic.

Take the lemon and lime, slice them in two and stuff the chicken with them. Add a some garlic. The more the better, I say 🙂

Then cover the chicken in the dough. Practice makes perfect, I am sure.

You then put in the pre-heated oven and bake for 1 hour and a half at 200 C/ 392 F.

Then break the now very hard shell and enjoy! (You will lick your fingers 🙂
